
Prep Time: 20 Minutes | Cook Time: 15 Minutes | Chill Time: 2.5 Hours | Servings: 2 cups |
Ingredients:
3 Large Peaches (approx. 450-500 grams)
1/3 Cup Water (80 ml)
4 Large Eggs at room temperature
1/2 cup Granulated Sugar (100 grams)
Juice of 1 Lemon
1/8 Teaspoon Salt (1 gram)
1/2 Cup Unsalted Butter Softened and cut into cubes (115 grams)
Directions:
Remove the pit from the peaches and rough chop them before adding them to the saucepan. You do not have to remove the skin it will be strained out later.
Water and peaches into a saucepan and turn to medium heat until peaches soften, about 5 minutes.
Add butter, sugar, and lemon juice to soften peaches.
Continue cooking until the butter is completely melted.
Pour mixture into a blender and blend until smooth.
Remove the lid from the blender; cautions mixture will be HOT and add eggs.
Blend again until everything is combined.
Strain the mixture through a fine mesh strainer back into the saucepan.
Turn the heat to medium-low and allow the mixture to thicken. This can take up to 10 minutes, depending on how hot your pan is. You will know it is ready when it coats the back of a wooden spoon,
Pour curd into desired container and let cool completely.

I was never a huge fan of peaches or peach-flavored desserts growing up. I would usually choose apple or blueberry unless peach was my only option.
When I met my husband, his favorite juice was peach, and as a newly dating couple, I would always say yes to whatever he gave me as a treat, whether I liked it or not. I always appreciated the gesture and drank quite a bit of peach juice in the beginning.
Fast forward a couple of years, and we were engaged, and I started getting more into baking, and knowing he loves peaches, I started making peach desserts. Turns out that the more you make a dessert the more you start to like it and now 7 years later I will ask for peach juice and love making all things peach.
